So, I wanted to know if a theme such as ‘Ultimo’ as recommended in one of the videos is a good idea or is there an adequate theme or some subtleties for this type of product?

Ultimo has a Demo Page dedicated for Digital Products that you can view here. Ultimo theme is a good choice in my opinion.

I don’t think there is that much of a difference between 2.3.1 and 2.3.3. However, it’s probably worth messaging the Ultimo devs in the Pre-Sales Comments.
